Sandy’s Seasonal Special: Chicken Tetrazzini

Ingredients:

  • 1/2 pkg (8oz) American Beauty Rotini, uncooked
  • 1/4 c (1/2 stick) butter  
  • 1/4 c chopped onion  
  • 1/4 c flour
  • 1 c chicken broth  
  • 1 c heavy cream
  • 1 c (9 oz can) sliced mushrooms, drained  
  • 1/3 c grated parmesan cheese
  • 1/2 tsp salt
  • 1/4 tsp white pepper
  • 1/3 c shredded swiss cheese  
  • 2 c diced cooked chicken

Sandy’s Tips

  • Enjoy with family
  • Makes 4-6 servings

Instructions:

  1. Cook pasta according to package
  2. In medium pan over medium heat, melt butter; add onion, cook 3 minutes or until tender
  3. Stir in flour; cook 1 minute
  4. Stir in broth & cream, cook stirring frequently until sauce just begins to boil and thicken
  5. Stir in swiss cheese, salt, & pepper; heat until cheese melts
  6. Remove from heat; stir in chicken, mushrooms, & hot pasta
  7. Spoon into 2 qt casserole dish
  8. Sprinkle with parmesan cheese
  9. Broil until lightly browned, about 5 minutes
  10. Serve immediately
