The Aztec Shawnee Theater & TaxPlus are having a Veterans/Military honor night!

4:30-5:30 TaxPlus will serve free coffee & donuts and therapy dogs will be there as well!
5:45 Aztec Shawnee Theater will recognize the branches of military and each veteran will be given a raffle ticket. (Envirotech has a prize you could win!)

Sandy’s Seasonal Special: Cheeseburger Soup
Ingredients:
1/2 lb ground beef
3/4 c. Chopped onion
3/4 c. Shredded carrots 3/4 c. Diced celery
1/4 c. Flour 3/4 tsp salt
1/4 c. Sour cream
8 oz process American Cheese, cubed (2c)
4 c. Diced, peeled potatoes (1 3/4 lbs) 1 tsp Dried basil
1 tsp Dried parsley 3 c. Chicken broth 1 1/2 c. Milk
1/4 to 1/2 tsp Pepper 5 Tbsp Butter
About The Soup
This month, Sandy Trowbridge’s choice for our seasonal special—a beloved family favorite, Jim Trowbridge’s Cheeseburger Soup. Jim, Sandy’s late husband, was well known for making this soup during their Sunday family dinners, a meal that always brought everyone together. Although Jim passed away in July, Sandy has chosen to keep his memory alive by sharing this recipe with all of us.
We’re honored to feature Sandy’s Seasonal Special this month with Jim’s well-loved soup recipe, a comforting dish that continues to bring warmth to the family. We hope it brings the same comfort to your home!
Instructions:
- In a 3 qt sauce pan brown beef; drain and set aside
- In the same sauce pan, saute onion, carrots, celery, basil, and parsley in 1 Tbsp of butter until vegetables are tender (about 10 min)
- Add broth, potatoes, and beef
- Bring to a boil
- Reduce heat; cover and simmer for 10-12 min or until potatoes are tender
- Meanwhile in a small skillet, melt remaining butter. Add flour and cook and stir for 3-5 min or until bubbly
- Add to soup; bring to a boil
- Cook and stir for 2 minutes
- Reduce heat to low; add cheese, milk, salt, and pepper. Cook and stir until cheese melts
- Remove from the heat; blend in sour cream
