For every new maintenance agreement signed up from October 1st through October 10th, we’ll be donating a portion of our proceeds to a local breast cancer foundation. In loving memory of Jim Trowbridge, our owner Terri’s father, we’ve created a special scarecrow tribute. Jim was an avid beekeeper and we’ve honored him with a unique scarecrow made from HVAC equipment, representing his passion for bees and our craft.

Sandy’s Seasonal Special: Best Pumpkin Cheesecake Bars
Sandy is Terri’s mom and Jim Trowbridge’s wife. She is very well known for her skills in the kitchen. We hope you enjoy!

Ingredients:
Crust

  • 3 c. Graham Cracker Crumbs
  • 1/3 c. Brown Sugar
  • 1 tsp. Ground Cinnamon
  • 1 tsp. Ground Nutmeg
  • 1/4 tsp. Ground Cloves
  • 1 Stick unsalted butter- melted

Cheesecake Batter

  • 4 (8oz) pkg cream cheese
  • 1 1/2 c. Granulated Sugar
  • 2 tbsp. Cornstarch
  • 4 Large Eggs
  • 3/4 c. Sour Cream
  • 1/2 c. Heavy Whipping Cream
  • 1 tsp. Vanilla

Pumpkin Layer

  • 1 Can Pumpkin Puree
  • 1 tsp. Pumpkin Spice
  • 1 tsp. Cinnamon
  • 1/2 tsp. Nutmeg

Cinnamon Whipped Cream

  • 2 c. Heavy Whipping Cream (Cold)
  • 1 tsp. Cinnamon
  • 1/2 c. Sugar
  • 1 tsp. Vanilla

Instructions:

  1. Preheat oven 325 degrees**

Cheesecake Crust

  1. Lightly coat 9×13 pan with baking spray & set aside
  2. Add crust ingredients to a large bowl & stir until well blended
  3. Press the mixture into the prepared pan going up the sides to about the middle
  4. Freeze for 20 minutes

Cheesecake Batter

  1. Beat cream cheese & sugar until light & fluffy on medium speed
  2. Add the rest of the ingredients from cheese cake batter list & continue beating until well combined
  3. Remove crust from freezer & pour 1/2 of the batter onto pan
  4. Return to freezer for about an hour
  5. Add the pumpkin layer ingredients to the remaining half of the cheesecake batter & whisk to combine
  6. Pour pumpkin layer on top of cheesecake
  7. Bake for 1 hour
  8. After one hour remove from oven & place on cooling rack for 2 hours until the cheesecake is cool enough to be transferred to the refrigerator
  9. Chill for 6 – 24 hours

Cinnamon Whipped Cream Topping

  1. Add cream, sugar, vanilla, & cinnamon to large bowl
  2. Using a large hand mixer or stand mixer, whisk on slow-med speed, gradually increasing to high speed. Mix until soft peaks form and holds its shape
  3. Add the whipped cream to a pastry bag & pipe it onto the cheese cake bars right before serving***

Sandy’s Tips:
** Adjust the top rack to be positioned in the middle or the oven
*** Use a star tip
