Sandy’s Seasonal Special: Fabulous Pecan Bars
Ingredients:
Crust
- 1/2 c Cold Butter
- 1 1/2 c Flour
- 1/4 c Ice water
Filling
- 1 1/2 c Packed light brown sugar 1 c Butter
- 1/2 c Honey 1/3 c Sugar
- 1 lb Pecans, roughly chopped (not too fine)
- 1/4 c Whipping Cream
Sandy’s Tips
- Make sure you check after 15 minutes in the oven to prevent burning
- Enjoy with family

James, our VP is Sandy’s son-in-law and he loves all things pecan!

Instructions:
Crust
- Use a pastry blender to cut the butter into the flour
- Mixture should resemble cornmeal
- Add water and stir with a fork to make dough
- Gather dough into a ball, wrap in plastic wrap
- Refrigerate for 1 to 2 hours
- Butter and flour a 9x13" pan
- Press dough into prepared pan (you can roll it out or press with hands)
- Let it come up about 1 inch on all sides
- Pierce dough with a fork
- Chill while you make the filling
Filling
- Preheat oven to 400 degrees
- Mix brown sugar, butter, honey, and sugar in a pan and bring to a boil over medium Stirring constantly
- Boil until think and dark, about 3 to 4 minutes
- Remove from heat and stir in pecans and cream
- Pour over dough in pan
- Bake for 25 minutes
- Check after 15 minutes. If filling is browning too much, reduce heat to 375 and keep baking
- Cool in pan
- Cut into small bars

Looking ahead to 2025, we’re excited to see what’s next—from expanding skillsets and taking on new challenges to celebrating even more personal accomplishments. Together, we’re ready to grow, succeed, and make the next year even better!
Martin Bender
Martin joined Envirotech as a technician just under six months ago and has already made an impact. One of his proudest achievements this year is successfully completing a full install—an accomplishment that reflects his dedication to learning and growing in his role.
For Martin, every day offers new opportunities to learn, making it hard for him to pinpoint just one specific learning experience. He is grateful for his close-knit family and friends, who provide unwavering support.
Looking ahead to 2025, Martin has his sights set on finding a better football team to cheer for—a playful nod to his love for the sport. One of his favorite work memories from this year is meeting everyone at Envirotech and building relationships with his colleagues.
When it comes to the holiday season, Martin enjoys the tradition of ice skating, a pastime that brings both joy and nostalgia.
Nathan Clark
As a technician at Envirotech for almost 10 years, Nathan has been an essential part of the team. Last year, he was especially proud of his work on Holland Homes, a large- scale, two-year project where the team custom-designed and installed ductwork, AHUs, and heat pumps for 11 systems in a full house remodel. Another memorable project was installing a cooled generator at a daycare with DJ — his first generator installation, which presented a rewarding learning experience.
On a personal note, 2024 has been a milestone year for Nathan. He and his wife, Kylie, tied the knot, and he officially adopted their oldest daughter, an experience that means the world to him.
He’s deeply grateful for his family, including his youngest daughter, whose personality is blossoming, and his wife, who supports him every step of the way.
Looking ahead to 2025, Nathan is excited about watching his kids grow, seeing Envirotech expand, and tackling new challenges in both areas. Outside of work, he and Kylie plan to start remodeling their kitchen and deck.
When it comes to holiday traditions, the whole family loves Halloween. Kylie enjoys making costumes, and the kids have a blast dressing up. Nathan, however, is more of a Christmas fan. He treasures the cold weather and staying home to spend quality time playing with his kids.
DJ DeMottee
DJ has been a technician at Envirotech for 7 years. He has traveled to a few of our out of town jobs this year. We are excited to see what 2025 has in store.
James Gallet
As the owner of Envirotech and being with Envirotech since 1995, James has seen the company grow and evolve in many ways, but this year has been especially memorable. He’s incredibly proud of how the entire team has come together—whether in the office, on out-of-town projects, or in local work. James shared how rewarding it has been to see everyone step up to take on new responsibilities and roles when needed and to watch their knowledge grow on the many complex projects tackled this year.
On the home front, James and his family are excited to welcome several new babies into their tribe within the next six months—a joy for the whole family. A personal milestone for James this year was earning his private pilot’s license in January 2024, fulfilling a long-time dream. Flying has been a passion that he has been able to share with many people this year, creating memories in the skies.
Looking ahead to 2025, James hopes to take a special trip with his family and extended family to Italy and Greece. He shared that one of his favorite memories this year was spending time on job sites with the crew, blending work and camaraderie.
When not at Envirotech, James stays busy with projects around the house, although Envirotech is never far from his mind. His favorite holiday tradition is hosting “Grinch Night” every year, a cherished event for his family.
James’s advice for the season? “Life is like a rollercoaster—keep your hands up and enjoy the ride.”
Mallory Gallet
Mallory has been part of the Envirotech team for around five years, transitioning into a full-time role within the last year with Marketing. She is especially proud of the growth in Envirotech’s social media presence and the refreshed look of our newsletter and website, which have fostered greater engagement with our customers and strengthened connections within the Envirotech family. A highlight of her year was stepping out of the office to visit job sites, where she learned more about fieldwork from Nate and Philip.
Outside of work, Mallory coaches cheerleading at her former high school and is incredibly proud of how well the girls have done this year.
On a personal note, Mallory is thankful for her family, friends, their family dog Posie, and the many opportunities she’s had. She is especially grateful to work at a company that values growth and collaboration and feels privileged to watch her parents, James and Terri, transform Envirotech from a small business into the thriving company it is today.
Looking ahead to 2025, Mallory is excited to become an aunt for the first time and to travel to Greece and Italy with her extended family. Her favorite holiday traditions include her family’s Grinch night and spending Christmas Day surrounded by her loved ones.
Terri Gallet
As one of the owners of Envirotech, Terri has been a vital part of the company since 2001. This year, she is incredibly proud of how hard everyone has worked and is excited to see the continued growth of the team. Terri emphasizes that every individual at Envirotech plays an important role in making the company successful and a fun place to work.
Gratitude is at the heart of Terri’s reflections this year. She shared how thankful she is for the amazing team that keeps Envirotech thriving. Looking ahead to 2025, Terri is excited about the possibility of taking a family trip, along with her sister and her family, to create special memories together.
Terri says it’s hard to pick just one favorite work memory from this year because there have been so many highlights, but she’s especially looking forward to celebrating with everyone at the upcoming Envirotech Christmas party.
Outside of work, Terri has been working on designing a charming greenhouse, which she hopes to bring to life soon. When it comes to holiday traditions, Terri loves going to church on Christmas Eve with her family and, of course, participating in the much-anticipated “Grinch Night.”
Jacob Humbargar
Jacob has been a technician at Envirotech for almost 5 years and has had a remarkable year, especially when it comes to personal and professional milestones. He is particularly proud of completing the Tulsa ANG project from start to finish, where he also gained valuable experience in air balancing on commercial air handlers. The Tulsa ANG job stands out as a key learning opportunity, teaching him about airflow balancing and pump pipe installation.
On the personal side, 2024 brought an exciting chapter for Jacob with his engagement in May! He is incredibly grateful for the support of his friends and family during this special time. Looking ahead to 2025, Jacob is eagerly anticipating buying a home and tying the knot in June. One of Jacob’s favorite memories from work this year was watching and feeling the power of F-16 fighter jets taking off up close at the Tulsa air base while installing a rooftop unit. It was an unforgettable experience!
Outside of work, Jacob has been focused on staying active, exercising, and diligently saving money for his future home. During the holidays, he looks forward to indulging in all the delicious seasonal foods that come around just once a year.
Joe Huppe
Joe has been an essential part of the Envirotech team as a Comfort Specialist for almost two years. This year, Joe is especially proud of helping customers find the best solutions for their homes and financial needs. A job he takes pride in is working alongside Fire Chief Dave Wood at KCKFD to replace equipment in several fire stations, ensuring the safety and comfort of the community.
In his personal life, Joe has been busy planning his wedding, which he eagerly anticipates in August 2025. This year, he is incredibly grateful for his mom, who triumphed over cancer for the second time—a testament to her strength and resilience.
Joe’s favorite work memory this year is the CPR training, which was both fun and informative. Outside of work, Joe dedicates his time to coaching high school girls' and boys' soccer teams, showcasing his leadership and passion for the sport.
His favorite holiday tradition is spending Christmas surrounded by family, cherishing the moments and creating memories together.
Philip Perez
Philip is one of our technicians and has been with Envirotech for three years. This year, he’s especially proud of all the out-of- town jobs he’s worked on and completed. Seeing projects through from start to finish always brings a sense of accomplishment. One job that stood out as a learning experience for Philip was PBW. It taught him patience and how to navigate through many changes and challenges.
Personally, Philip feels he’s grown a lot this year by finding himself and truly enjoying life. He is incredibly grateful for his fellow technicians, who make the work week more enjoyable and productive. Looking ahead to 2025, Philip is excited to continue improving his trade knowledge and is planning to buy a house.
One of his favorite memories from work this year was being on a job that required hiring an outside company. It turned out that his best friend works for the company they hired, making it a cool and meaningful experience to work on the same job site together. He also values any time he gets to work with Nate.
Outside of work, Philip has been hitting the gym, focusing on building muscle and improving his physique. When it comes to holiday traditions, he loves playing board games with his siblings or watching holiday movies. And of course, he has to add: Go Pack Go!
Jacob Staples
Jacob is one of our skilled technicians and has been part of the Envirotech team for a little over two years. This year, Jacob is proud of how much more confident he has become on service calls, tackling challenges head-on with growing expertise. A standout job for him was the Lansing prison project, which provided valuable learning experiences and tested his skills in new ways.
On a personal note, Jacob became an uncle in March, marking the arrival of the first baby in his family in quite some time—a milestone he cherishes! He is especially grateful for his health, which allows him to fully experience life and all it has to offer.
Looking ahead to 2025, Jacob hopes to achieve a big personal goal: purchasing his first house! His favorite memory from work this year was watching the eclipse at PBW, a moment of wonder shared with the team. Outside of work, Jacob has been working on his motorcycle and dreams of owning a new one next year. For Christmas, his favorite tradition is watching It’s a Wonderful Life every Christmas Eve, a heartwarming way to embrace the holiday spirit. Jacob would like to extend a special thank-you to James, Terri, and the entire Envirotech family for all their support and encouragement.
Kai Stratton
Kai joined the Envirotech team as a technician almost a year ago and has already accomplished so much in his time with us! One of his proudest achievements this year was traveling to New York to work on the barracks at West Point Academy. A standout learning experience for Kai was tackling the Lansing project, where he worked on a 100-ton unit and brazed line sets with over 2-inch inside diameters—a task that challenged and advanced his technical skills.
On the personal side, Kai added a second motorcycle to his collection this year and has been enjoying rebuilding the motor on one of them. He’s grateful for the opportunity to work alongside longtime friends at Envirotech and for the progress he’s made in both his professional and personal life.
In 2025, Kai is looking forward to achieving a big milestone: purchasing his first home! One of his favorite memories from work this year was doing demo work at the Truman House with Philip—especially when Philip had to crawl into some very old ductwork.
For Christmas, Kai’s favorite tradition is visiting Deanna Rose to see the lights with his family and driving through neighborhoods to admire the holiday displays.
Leslie Thom
Leslie has been with Envirotech for about 2.5 years and is our Government Contractor. This year, she is especially proud of her success in the National Guard market, where she has completed two contracts and continues to excel. Through her work, Leslie has learned numerous tips and tricks from her co-workers at ETTM, enhancing her skills and experience.
Outside of work, Leslie has enjoyed watching her children thrive, with Brooke taking on the role of school mascot and Owen playing soccer. She is incredibly grateful that the entire team at Envirotech is now First Aid and CPR certified, a skill set that is valuable both in and outside of work.
In 2025, Leslie is looking forward to securing additional contracts and expanding her contributions to Envirotech. One of her favorite memories from this year is a unique experience—flying over the city with James, a moment that stands out as a highlight.
Leslie’s favorite holiday activity is staying up late playing board games, a cherished tradition that brings joy and connection during the festive season.
Zach Vesper
Zach has been a valued part of the Envirotech team for a little over three years. One of his proudest accomplishments this year was piping in in-line hot water coils at Fort Leavenworth. From reading the plans to ordering everything and completing the job independently, it was a fulfilling and rewarding experience. Another significant learning opportunity for Zach was working out of town in Tulsa, OK, and Des Moines, IA — an experience that challenged and grew his skills.
On a personal note, Zach celebrated his first wedding anniversary this year and made significant progress on his house renovations, nearly bringing it to a point where he and his wife are happy. He is especially grateful for his wife’s patience and support, as well as the chance to take on out-of-town projects, which have been a blessing professionally and personally.
In 2025, Zach is excited about more out-of- town opportunities, particularly the chance to work in Tulsa again. His favorite work memory this year was the time spent with the team while traveling, as he not only learned from the work itself but also enjoyed bonding with his colleagues after hours.
Outside of work, Zach continues to focus on his house renovations. His favorite holiday traditions include drinking eggnog, singing hymns, and visiting family out of town.
Ashley Wiehe
Ashley has been an invaluable part of the Envirotech team, handling accounting duties for almost five years. One of her proudest achievements at work is getting big warranties approved—a task she doesn’t necessarily enjoy but finds extremely rewarding when completed. Once those claims are filed away, it’s a small victory worth celebrating!
In her personal life, this past year has been full of milestones. Both Trenton and Reagan graduated high school, with Reagan continuing her softball career at Peru State and Trenton preparing to ship off to the Air Force by the end of the year. Their family also welcomed Sadie Mae, a lovable rescue dog, adding more joy to their household.
Ashley is deeply grateful for the time she gets to spend with her family and appreciates James and Terri’s understanding of the importance of family commitments, such as attending her kids' sporting events. This alignment of values makes Envirotech feel like a second home to her.
Looking ahead to 2025, Ashley is most excited to cheer on Reagan during her first season of college softball. One of her favorite memories from work this year is hiding little rubber ducks around the office for James to find after he returned from an out-of-town trip—which are still being found to this day!
Outside of Envirotech, Ashley has developed a love for plants, both at work and home, filling her spaces with greenery. Her favorite holiday tradition is making homemade egg noodles with her grandmother’s recipe—a family tradition they’ve kept alive since her grandma passed in 2012. Ashley also loves baking day with her family, where they make cookies and share time together in the kitchen. Watching her daughters learn to cook and bake over the years has made these moments even more special.
